Ingredients:

  1. 250 gr/9-10 oz water spinach, cut into 5 cm length
  2. 5 small red or green chillies / bird chillis, finely sliced
  3. 5 shallots, finely sliced
  4. 3 cloves garlic, finely sliced
  5. 1 cm galangale, crashed
  6. salt to taste

Note..

Have you ever asked yourself what is actually the secret tricks of making a delicious asian stir fry dish? The answer is just simple as to make it ;-). 1st. Sufficient spice, means more is better than less. 2nd. Stir-fry the spice until fragrant or you can smell the good aroma then proceed to the next step.

Directions:

  1. Trim and discard the bottom coarse, hard end of the water spinach.
  2. Cut the remaining part into 5 cm lengths, keeping the leaves separate from the stems.
  3. Rinse in a cold water separately. Set aside to drain.
  4. Heat 2 tbsp oil in a wok or frying pan and stir shallot, garlic, chilly and galangale.
  5. Stirring all the time until you smell the good aroma.
  6. Add the stem part of the water spinach, stir and cook for 1 minute, then add the leafy parts.
  7. Add salt to taste and take the wok away from the heat to prevent overcoked.
  8. Serve hot with rice and other accompaniments (e.g. Fried Tofu or Tempeh).
