Ingredients:

  1. 750 gr/1.5 lb oxtail, trim and discard the excessive fat if necesssary, rinse in a cold water
  2. 2 lt water
  3. 2 tsp salt
  4. 2 cloves garlic, smoothly grinded
  5. 2 cm ginger, peel-off, bruished
  6. 1/2 tsp pepper
  7. Oil

For the Soup:

  1. 1.5 lt/3 pints beef stock or water
  2. 2 carrots, peel-off, thinly sliced
  3. 250 gr/9 oz potatos, peel-off, cut in a cube
  4. 2 spring onions, cut into 1 cm length
  5. 1 sdt vegetable broth powder
  6. 1 tsp pepper
  7. 1/4 tsp nutmeg powder
  8. 2 pcs cloves
  9. 1 tsp salt
  10. 2 tomatoes, sliced

Spice Paste:

  1. 5 asian shallots or 3 european shallots, chopped
  2. 3 cloves garlic, chopped
  3. 2 cm ginger, chopped

Garnish:

  1. celery, finely sliced
  2. fried shallots
  3. sambal (if preferred)

Note..

There are many varieties of oxtail soup. One of the popular variant which's originated in Indonesia is "Fried Oxtail Soup" - a fried/barbecued oxtail combine with soup variation. The specialty of fried oxtail soup is that the oxtail is not only be cooked but also be fried afterward. Usually both will be served in two separated dishes to preserve it's best taste. While ejoying a bowl of yummy soup you can take a bite on your crispy crunchy oxtail ;-)
Important tips : If preffered use the pressure cooker to cook the oxtail to reduce the cooking time. Discard the used water after oxtails have been boiled, never think a twice to reserve it for stock. Experience told me those used water always containt too much fat and smell pretty badly.

Directions:

  1. Pour in 2 liter water in a deep saucepan. Add salt, garlic, ginger and pepper.
  2. Cover the pan and bring to boil.
  3. * Add the oxtail and cook on medium heat until the oxtail is well cooked and the meat becomes tender.
  4. (If necessary skim off and discard the fat that floats to the water surface).
  5. Take the oxtail and set aside to drain. Discard the used water.

  1. Grind all ingredients for the spice paste with grinding stone or food processor until smooth.
  2. Heat 2 tbsp oil in a frying pan, stir-fry the paste all the time until well cooked & fragrant. Put aside.

  1. ** Heat 1.5 lt beef stock or water in a deep saucepan and bring to boil. Add the stir-fried paste.
  2. Lower the heat into medium. Add the carrot and potato and simmer until the vegetable well cooked.
  3. Add the pepper, nutmeg, cloves and salt. Adjust the seasoning.
  4. Add the spring onion and sliced tomato. Lift immediately to prevent overcooked vegetable.

  1. Heat enough oil in a frying pan or deep fryer and fry the oxtail until golden brown. Set aside to drain.
  2. Serve the soup with fried oxtail while hot separately and garnish with celery and fried shallot.

Special Note:

  1. * Add the meat into boiled water then cook on the medium heat to preserve it's best taste.
  2. ** If possible use the beef stock instead of water to make the soup to obtain the best taste.
