Ingredients:

  1. 500 gr/ 1 lb 2 oz beef meat (with fat) if preffered
  2. 1.5 lt/ 3 pints Water
  3. 5 pcs long beans or 20 pcs young French beans
  4. 2 cm or 1 tsp galangale, bruished or sliced
  5. 1 stem lemon grass, outer leave discard, bruished
  6. 3 tbsp tamarind water (1 tsp tamarind pulp soak in 3 tbsp water)
  7. 5 fresh green chillies
  8. salt to taste
  9. sugar to taste

Spice Paste:

  1. 2 large red chillies, de-seeded, chopped
  2. 5 shallots, chopped
  3. 2 cm ground turmeric or 2 tsp turmeric powder
  4. 1 pinch roasted shrimp paste / Terasi ( optional )

A small note...

Here it is the typical cuisine from Banjarmasin - South Kalimantan : Sour Beef Soup. I think it tastes similarly to the Bone Ribs Soup from Palembang - South Sumatra. Tempting flavours of spices & fresh vegetable definitely stimulate you to try this! . Long beans is commonly used in the original recipe but unfortunatelly this exotic vegetable not always available in Asian shops. So this time I took the French Beans as a subtitude. But I assure you.. it still tastes superb ;-)...

Directions:

  1. Pour in 1.5 liter water in a deep saucepan, cover the pan and bring to boil.
  2. Adjust the heat into medium, *** add the beef meat until cooked.
  3. (If necessary skim off and discard the fat that floats to the water surface).
  4. Take out the meat and cut into a cube ( 2x2 cm). Put again into the pan.
  5. Cut the long / french beans into 3 cm long.
  6. Put all ingredients for the paste in a blender or food processor and blend until smooth.
  7. (If necessery add a little bit water to help the blending process).
  8. Heat 2 tbsp oil in a Wok or big saucepan. (Don't add oil if already added in a blender).
  9. Stir fry the paste & lemon grass. Stirring all the time until fragrant.
  10. Add the fried spice into the pan.
  11. Add the sliced beans & big green chillies & continue cooking until vegetable half cooked.
  12. Adjust the seasoning, add the salt and sugar to taste until it tastes sour & sweet.
  13. Serve hot with rice.

  1. *** Add the meat into boiled water then cook on the medium heat to preserve it's best taste.
